i came across this this tip for removing the muddy taste of pike, and also carp i should imagine

Combine 4 cups milk and 1 cup mayonnaise in a large bowl and immerse the fish fillets in the mixture. Cover the bowl with a sheet of plastic wrap and refrigerate for 24 hours. The milk draws out oils and the mayonnaise binds to the oils so they do not re-enter the fish. This removes the distasteful muddy flavor of the Northern Pike.

i suspect that pike and carp sold commercially are farmed or at least "prepared" by putting them in clean-water tanks for a few days to clean them

Pike can be excellent. One of my favourite dishes is Quenelles de brochet. It is sort of mousse made with pike. You can have it with variety of sauces. I have had it in Paris, London and made it at home. I think the recipe is in Larousse.
