Green beer gathers steam in UK-13/12/07-New Scientist magazine reports (PDX)

Environmentally-conscious beer drinkers can now reduce their carbon footprint,thanks to a new brewing technique.The method saves energy and reduces waste by using violent steam blasts to speed up the brewing process,New scientist magazine reported.It is used at the energy-intensive "wort boil" stage of beer-making when hops are added to liquid containing malted cereal grains.In tests over 2 years at Coors brewery in Burton upon Trent,Derbyshire, it was found to cut wort boil energy consumption by 40%.The new technique,called PDX and developed by Pursuit Dynamics,based in Huntingdon,cambs,involves blasting steam at supersonic speeds into the brewing vat...Jens Thorup,Persuit Dynamics's technical director said:"The steam rips the liquid apart completely to form tiny atomised droplets.The droplets create a massive surface area that speeds up brewing reactions"..Brewers Shepherd Neame,based in Faversham,Kent, and Carlsberg of Denmark are now set to adopt the PDX method,the magazine reported.
