As a newbie to Betfair-can someone give a wrap up of why one would want to lay someone-isnt this just opening urself up to a lot of possible risk?

No worse risk than the other side. In fact you will probably win more often than lose so laying is often more comfortable for some people.

John, Had a great time. The only thing we didn't enjoy was the long journey back. Had 2 back to back flights of 12 and 11 hours respectively and no baggage at the end!
