Grilling: Lamb chops should be grilled on a covered grill over a medium-high heat. Ideally, you should grill them to medium rare or medium. There are few things worse than a dried out, over-cooked lamb chop, so keep a close eye on them and remove the chops from the grill when you reach an internal temperature of 140 F. And as always, let the meat rest for a few minutes before you serve it; in this case, five minutes will be good.

I'd like to know who bothers to test the internal temperature of a lamb chop with a thermometer.

Stick a knife in it and look at the colour. If it's pink, it's going to be good!

That looks like a scraggy bit of shoulder to me, Mrs Lambykins ........... I certainly wouldn't waste my time with that. Guard of Honour has got to be my favourite.



I'd also like to point out that I am not one of the ladies in that photo .......... I'm far, far better looking than either of those two as you can probably see from my photo.

Hilary - Doris told me about you and men in uniform so I guessed you would like a guard of honour. Your face lift has worked wonders and nice to see you have cut back on the beer.
